Chef David Rosov unveils a culinary experience that pays homage to Spain’s most revered delicacy: Ibérico pork. Sourced from acorn-fed black Ibérico pigs raised in the dehesas of southern Spain, this ingredient is celebrated worldwide for its marbling, depth of flavor, and unmistakable sweetness from the pigs’ acorn-rich diet.

“The flavor of true Ibérico is incomparable,” says Rosov. “It has the complexity of Wagyu beef but the delicacy of fine charcuterie. This menu is designed to highlight every unique cut.”

This release marks one of the few private chef Ibérico tasting programs available in South Florida.
